Jon Young, owner of the popular Kitsch’n Restaurants and Volo Restaurant Wine Bar, partners again with Chef Stephen Dunne to unveil a modern food & drink spot in a 100 year old former
speakeasy at 415 North Milwaukee Avenue in River West.
Opening its doors late August, Paramount Room will feature a unique, 100 seat dual level space loaded with urban charm and contemporary design elements created by Nicole von Meier Design. On the street level, a handsome storefront tavern space features exposed brick, lofted ceilings, distressed wood floors, an open kitchen, cozy booths and an indigo color-scheme accented by dark wood tones. One floor below, a resurrected prohibition-era basement
speakeasy has been completely redesigned with chic modern lounge elements and high, dramatic ceilings. Plasma TVs, a custom felt pool table, elevated DJ booth, and a mezzanine
balcony frame Barcelona Chair-style banquettes and high-tops, offering room to mingle.
Belgian, craft-brewed, domestic, and imported beers covering a range of stylistic, geographic,
and flavor profiles - in addition to house-infused liquors and a full bar - compliment a chef-driven
menu of elevated pub standards and internationally inspired dishes of skillfully prepared but
unpretentious fare. A unique focus on menu seasonality, rotating beer flights, suggested food &
beer pairings, and signature cocktails, will allow the Paramount Room to offer a distinctive and exceptional experience on each visit - as well as planned outdoor seating, and a late-night
kitchen open until 1am. |
